Medjool dates
Dutch processed cocoa powder
Dark chocolate chips

Ingredients
12 oz pitted Medjool dates (one full package)
1/3–1/2 cup unsweetened Dutch process cocoa powder
1.5-2 cups dark chocolate chips (melted for dipping)
Optional: pinch of sea salt on top
Directions
1️⃣ Blend the Base
Add the pitted dates to a food processor and blend until they form a thick, sticky paste.
2️⃣ Add Cocoa
Add 1/3–1/2 cup Dutch process cocoa powder and blend again until fully combined.
You’re looking for a rich, brownie-batter texture — thick, smooth, and slightly sticky but not dry.
If it feels too dry, add 1–2 extra dates and pulse again.
3️⃣ Roll Into Balls
Using your hands, roll the mixture into small bite-sized balls (about 1 inch each).
Place them on a parchment-lined plate or tray.
4️⃣ Chill to Firm
Place the tray in the refrigerator for 20–30 minutes (or freezer for 10–15 minutes).
This helps them firm up before dipping so they hold their shape.
5️⃣ Melt the Chocolate
In a microwave-safe bowl, melt 1.5 cups dark chocolate chips in 20–30 second intervals, stirring between each round until smooth and glossy.
Do not overheat — slow and steady keeps the chocolate silky.
6️⃣ Dip & Coat
Using a fork, dip each chilled ball into the melted chocolate, allowing excess chocolate to drip off before placing back on parchment.
Optional: sprinkle flaky sea salt on top before the chocolate sets.
7️⃣ Set the Shell
Return to the refrigerator for 15–20 minutes until the chocolate hardens.
Store in an airtight container in the refrigerator for up to one week.
