Biscoff Cookies Two Ways: Classic & Protein-Packed
There’s just something about Biscoff cookies — that warm, spiced flavor and melt-in-your-mouth texture is pure comfort. 🍪✨ I first made these Soft & Chewy Biscoff Cookies for a weekend treat and they were a total hit (yes, Gabe approved 😍). But because I know so many of us want to enjoy sweets and still feel aligned with our fitness goals, I created a second version: Protein Biscoff Cookies. These are lighter, higher in protein, and perfect when you want a little balance without giving up that classic Biscoff flavor.
🍪 Soft & Chewy Biscoff Cookies
Ingredients (makes ~18 cookies)
½ cup (115 g) unsalted butter, softened
½ cup (100 g) brown sugar
¼ cup (50 g) white sugar
½ cup (120 g) Biscoff spread (cookie butter)
1 large egg
1 tsp vanilla extract
1 ¼ cups (160 g) all-purpose flour
½ tsp baking soda
¼ tsp baking powder
¼ tsp salt
Optional: ½ cup crushed Biscoff cookies for extra crunch
Directions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream together butter, brown sugar, and white sugar until light and fluffy.
Beat in the Biscoff spread, then add the egg and vanilla. Mix until smooth.
In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
Gradually add dry ingredients to the wet mixture. Mix until just combined (don’t overmix).
If using, fold in crushed Biscoff cookies.
Scoop dough into balls (~1 ½ tbsp each) and place on baking sheet, leaving space to spread.
Bake for 9–11 minutes, until edges are lightly golden but centers look soft.
Let cool on the tray for 5 minutes, then transfer to a wire rack.
💪 Protein Biscoff Cookies
Ingredients (makes ~12–14 cookies)
½ cup (120 g) Biscoff spread (cookie butter)
1 large egg
¼ cup (60 ml) unsweetened almond milk
½ cup (45 g) vanilla or cinnamon protein powder (whey or plant-based)
½ cup (60 g) oat flour (or blended rolled oats)
¼ tsp baking powder
Pinch of salt
Optional: 2–3 crushed Biscoff cookies mixed in or on top
Directions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, whisk together the Biscoff spread, egg, and almond milk until smooth.
Add protein powder, oat flour, baking powder, and salt. Stir until a soft dough forms.
If using, fold in crushed Biscoff cookies.
Scoop ~1 tbsp portions onto the baking sheet, flatten slightly.
Bake for 8–10 minutes, until edges are set.
Let cool for 5 minutes on the tray, then enjoy warm or transfer to a wire rack.
